Easy Vegan Split Pea Soup



This recipe is so easy I honestly feel a little silly writing it down.

Easy Vegan Split Pea Soup

2 T olive oil
1 vidalia onion
1 lb bag of green split peas
4 cups vegetable broth
4 cups water
a few shakes of liquid smoke

Chop onion and sauté in stock pot in olive oil. Add uncooked split peas and stir, then add broth and water and bring to a boil. Turn heat to medium and cook, covered, for 30-35 minutes or until peas are tender. Remove 1/3 of peas and reserve in a separate bowl. Process soup through processor, blender, or blend with immersion blender. Add reserved peas back into pot and stir, add liquid smoke, and salt and pepper to taste. Add additional water to thin, if necessary.

Garnish with extra virgin olive oil and smoked paprika (optional).
